Description

A quick and healthy meal of Tuna and Avocado Tostadas, perfect for a crunchy, creamy lunch or dinner.


Ingredients

2 ripe avocados
1 can of tuna, drained
4 corn tortillas
1 lime, cut into wedges
Fresh cilantro for garnish
Sliced radishes (optional)
Salsa or hot sauce (optional)
Salt to taste


Instructions

Preheat the oven to 375°F (190°C). Place tortillas on a baking sheet and bake for 8-10 minutes, flipping halfway through.
Mash the avocados with a pinch of salt and lime juice in a bowl.
Drain and fluff the tuna with a fork, mixing in olive oil and cilantro, if desired.
Once the tortillas are crispy, spread the mashed avocado evenly on top, then add the tuna.
Top with cilantro, radishes, and a squeeze of lime. Add salsa or hot sauce if you like some heat.

Notes

For a lighter version, skip the mayo and top with Greek yogurt.
For a vegetarian option, swap the tuna for black beans or roasted veggies.
